What Happens When You Log Out of Valheim
The quick answer is that you don’t leave behind a body or anything when logging out of a Valheim server. This is because your character can hop between worlds/servers while keeping their stuff. Which, fortunately, prevents other players from attacking or looting your body like other sandbox games. This means you can log out at any time while playing, but just remember, you’ll spawn back in at the same spot.
If you choose to log out in a dangerous area, you may have a rough time logging back in. Similar to using portals in Valheim, there may be a few seconds while logging in that you’re vulnerable before able to move. This is why it’s still a good idea to give yourself some sort of shelter if possible. Even if it’s taking over an abandoned hut or tower temporarily. But, regardless of what you do, nothing can happen while you’re logged out.
Logging Out on a Boat in Valheim
If you’re worried about logging out while sailing around the ocean, here’s what you need to know. If you’re playing on your own server without it being live when you’re not on it, you’re fine. It doesn’t matter what type of ship or if you’re sailing full speed when logging out. Regardless of the situation, when you log back in, you’ll be on the ship. If you log out while on the rudder or with the sails down, you’ll be off the rudder with the sails up on logging back in.
The one time you’ll have an issue is if you’re playing on a dedicated server or server hosted by someone else. If you log out while a server is still live, the boat may move with the water. If you’re playing with others and someone sails the ship while you’re not online, you’ll relog back in the ocean. The one good thing worth knowing is that if nobody is on the ship, the sails will automatically raise. This makes it easier for you to get back on the boat.

If a troll happens to wander into my encampment or a raid happens - if I log out, will the enemies continue to destroy everything or will things stop until I log back in?

Hey Sgram, everything will stop until log back in as long as the server shuts down. Which is typical unless you have a dedicated server or pay for one, for example. I'm not positive off-hand if the troll or raid will be there when you log back on. But I don't think it would be.
